I'd love to hear how people do this. I only seem to see the ability to schedule an item, but what about items that aren't to be done on a certain day, that are "Do ASAP" items, but have a final deadline? Is there a way to get both those in there? Thanks!

If you go to your Options/Preferences - Miscellaneous, Actions tab, you can check to add due date and start date for actions other than scheduled.

I recommend you go through all the tabs to see what other set-up you might require, like date format, start day of the week, etc..
